5 Days of Healthy Food: Avocado Brownies

Have you ever felt like you are in need of a detox?  That you try on your favourite red pants and they just don’t fit? Well I did this week! Summer is over! It doesn’t matter if you either went on vacation or you stayed and studied for the exams, trust me, you did not watch what you were eating.

Even though I know the “bikini body” season is over, I like to take care of myself and what I eat. At the beginning of the week I started to think on what I could do rather than just exercise. Then I thought… 5 days of detox! Yet I don’t mean those diets where you only drink juice, I mean 5 days of clean eating. 5 days where you commit to letting go of all those bad and empty calories and junk food to transition into a clean start for the next school year. Making healthy choices is always encouraging for any new beginning!

That’s why I’ve decided to share with you 5 recipes that filled one of my foods everyday. Stay tuned and follow my blog so you create not only this recipe, but also the other four!

As the first day is the most difficult, lets start with a healthy but delicious desert: Avocado brownies.

I know it sounds very wrong but it is really delicious! A normal brownie recipe contains a great deal of calories, but this recipe is a completely different story.  The job of the avocado is to replace the butter. Half a cup of butter has around the 814 calories, mean while one big avocado has only 180. Plus it is a healthy type of fat with a lot of benefits for your body.

For this brownies you will need:

  • 1 large avocado
  • 1/2 cup unsweetened applesauce
  • 1/2 a cup maple syrup (or stevia for a more healthy snack)
  • 1tsp vanilla extract (optional)
  • 3 large eggs
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • pinch of salt
  • 1 tsp baking soda
  • 1 cup chopped pecan nuts
  • 1 tablespoon coconut oil

Here is what you’ve got to do:

Preheat the oven at 350° . Mix in a food processor the avocado, applesauce, maple syrup (or stevia) and the vanilla extract until you’ve got a fluffy light green cream.

After that gently add the eggs one by one.

In another bowl mix the coconut flour, cocoa powder, baking soda and salt.

Mix the dry ingredients with the wet ones until they are perfectly blended together.

Grease the pan with a tablespoon of coconut oil and bake it for 25 minutes

Easy, I know! And they are ready in no time. Good luck this week if you decide to start a 5 day detox with me. Please let me know through social media if you make them and how they turn out to be. Stay tuned for tomorrow’s delicious snack.

Hope you enjoy them!
